While it's sad to see they won't be doing another cask strength pot still they're leaving it on a high, just for now I hope. The highly anticipated fifth and final release of the small batch single pot still whiskey series from Dingle Distillery. Matured fully in Bourbon casks resulting in a rich smooth whiskey. Tones of dried raspberries and butter mints are followed by white chocolate with a sprinkling of flaked almonds. The chocolate gives way to that returning Dingle spice of soft wood and leather notes which glide you into a long, memorable finish. Established in 2012, Dingle has quickly gained recognition for its exceptional spirits and commitment to traditional craftsmanship. The distillery focuses on producing small-batch, handcrafted whiskies that embody the rich heritage of Irish whiskey-making. Concentrating on Single Pot Still and Single Malt whiskey production the company has won many awards in the short time it has been operating, whilst garnering a multitude of followers who are keen to sample the excellent small-batch releases. Dingle has recently started to bring out some semi-permanent releases as part of the ‘Celtic Series’ with each of these celebrating the seasonal Celtic festivals such as Samhain, La le Bride and Bealtaine.
